When we see everybody getting busier and busier, and meanwhile still looking for ways to get even more stuff done in a day!

So it would only be natural to want more inspiration for healthy and easy dishes you can make, prep, store, freeze ahead of time.

Here you go! Almond Flour Pancakes

Only 6 ingredients

No added sugar

Perfect to make ahead and have on hand as that tasty but healthy grab-and-go whenever you need it.

WHAT

(12 pancakes)

6 large Eggs

1 cup Almond Four  

1/4 cup Coconut Flour

1 tablespoon Baking Powder

¼ cup unsweetened Almond Milk

½ tablespoon Vanilla Extract

(electric or stove top Grill) Pan



HOW

  1. Preheat (electric or stove top grill) pan to medium heat. Spray or oil if necessary.

  2. In a mixing bowl with milk and vanilla; add eggs and whisk together.

  3. Add almond, coconut flour and baking powder. Whisk together until smooth.

  4. Scoop ¼ of the batter onto the pan form pancakes.

  5. Cook (2-3 minutes) then flip and cook (another 2-3 minutes) until golden brown on both sides. Note; uou may not see bubbles on the first side as the batter is thicker. Don't wait for bubbles to flip your pancakes.

  6. Once cooked, transfer to a wire baking rack to cool a bit before serving. You can add a honey or maple syrup to sweeten without affecting the batter.

NOTE

These Pancakes have plenty of flavor without adding sugar, but you can always add a smidge of maple syrup to sweeten without affecting the batter.

Refrigerator up to 1 week or freezer 1 month.
