This Chicken Quesadilla recipe is a fun and easy way to use up your leftover chicken and have that delicious, dinner on your table fast.
Quesadillas are a go-to meal for real. You can stuff the little bundles of joy with everything from ground beef, or pork to leftover pot roast. Today, it is leftover chicken.
What is it with leftover chicken that it can taste even better the day after it is prepared?
Anyway. in all honestly, we don’t need one more thing cluttering up our kitchen space. Therefore, we do not own a quesadilla maker (even though we make quesadillas on the regular)
All you really need for your 15-minute chicken quesadilla dish is one large pan.
4 (8") Burrito Wraps
1 1/2 cup cooked Chicken - chopped
1 cup Onion - diced
1 green Bell Pepper - diced
1 tablespoon - oil
2 teaspoons Chili powder
1 teaspoon ground Cumin
1/8 teaspoon Cayenne pepper, optional
1 1/3 cup cheddar Cheese - shredded, to taste
Saute onion and pepper over medium heat (3-5 minutes) until onion softens.
Add chicken, chili powder, cumin, and cayenne pepper. Stir to combine and coat evenly with seasonings. Remove from heat.
Heat a large pan over medium heat (work in batches depending on the size of your pan)
Place a burrito wrap in the pan, cover half with chicken mixture and top with 1/3 cup cheddar. Fold wrap in half to cover filling.
Cook (4-5 minutes per side) until slightly browned and cheese is melted. Repeat with remaining burrito wraps
