Then the thought pops up I’m just dying for some baked goods, Cake sounds amazing right now! Hmm, to bake a whole cake… never mind.
I need CAKE!
We got you. This delicious and much healthier version of a storebought cake can be made in a NY minute, all from your favorite coffee mug! Aaand it comes complete with crumbly streusel topping.
If you prefer to bake your cake in a muffin tin or ramekin, just follow the same steps only you pop your cake in the oven for 12-13 minutes.

3 tablespoons spelt, white, oat, or almond flour
1/4 teaspoon baking powder
1/16 teaspoon salt
pinch stevia or 1 tablespoon sugar
1 tablespoon + 2 teaspoons water
2 teaspoons oil applesauce or buttery spread
1/4 teaspoon pure vanilla extract
1/4 teaspoon cinnamon
2 teaspoon brown sugar (or keto sweetener)
1/2 teaspoon oil applesauce or buttery spread
tiny pinch salt
3 pecan or walnut halves - finely chopped
*In your coffee mug; Combine dry batter ingredients and mix well. Add wet ingredients and mix until just mixed.
In a tiny bowl; combine all streusel ingredients.
Grease your coffee mug and fill it 1/2 way with the batter. Sprinkle on two-thirds of the streusel, then spoon remaining batter on top. Finally, sprinkle on the rest of the streusel.
Bake in the microwave at 1000w around 1 minute or until toothpick pierced in the center of the cake comes out clean.**
*If you prefer to bake your cake in a muffin tin or ramekin, follow the same steps only Preheat your oven to 330ºF / 170°C and
bake 12-13 minutes in the oven.
**You may need to adjust your cooking time depending on your microwave. After 30 sec I would try 10-second increments until your cake is just right.
