Huh, what is carob?

Carob comes from a pod of a small evergreen carob tree, which is native to the Mediterranean. The long brownish-purple edible pods contain a sweet pulp that is dried, roasted, and then ground into a brown floury powder. That powder is called carob powder and is sold as is or made into chocolate-like chips.

Both the powder and Carob chips are similar in color to cocoa powder and chocolate chips, but their flavor is quite unique. Carob is less bitter than chocolate and has a roasted, naturally sweet flavor. Carob chips are made without added sugar for this very reason.

Carob also happens to be caffeine-free and high in fiber. Yes, this almost nutty flavored super powder is truly fab! We packed all of this goodness into one, very portable, homemade dessert protein bar.

Carob powder and carob chips can be substituted one-for-one for cocoa powder and chocolate chips in all kinds of recipes. 11-14 bars

1/4 cup almond butter

1/2 cup crispy rice

1/4 cup carob powder

1/2 cup virgin coconut oil - melted

1/4 cup shredded coconut

1/2 teaspoon natural vanilla extract

15 drops stevia

pinch of cinnamon and a pinch of sea salt

Some extra shredded coconut to sprinkle on top


small (silicone) baking tray


  1. In a mixing bowl, add all of the ingredients and mix.

  2. Line a small container with parchment paper of pour mixture it in a small silicone tray, so it's 3/4 inches thick.

  3. Put in the freezer for 5 minutes, sprinkle some extra shredded coconut on top. Then, put in your refrigerator until it's fully hardened.

  4. Cut into squares on a cutting board and serve cold.
