The easy to make and o so portable apple bites really do taste like a no-bake cookie and will give you the kind of energy that makes us go-getters GO.
APPLE-OAT BOOST BALLS
(8 boost balls)
2 1/2 cups rolled oats
1 cup Granny Smith apple - grated
1/2 cup almond butter
1/2 cup unsweetened shredded coconut + more to coat
1/4 cup honey
1 teaspoon salt
1 teaspoon ground cinnamon
chia seeds, to coat
Combine oats, apple almond butter, coconut, honey, salt and cinnamon in the bowl of your food processor. Process until fully combined.
Scoop into 2 tablespoon-portions and roll into balls.
roll each in coconut flakes and chia seeds.
Arrange balls on parchment paper-lined sheet pan and refrigerate at least 2 hours.
You can serve and enjoy them right away or store in an airtight container in the fridge for up to 5 days.
