It’s light, yet completely satiating.

Bake up a batch for you and your friends. Pair it with a almond milk latte, of course.

What

(1 serving)

1/2 avocado

1 egg

1/4 cup pico de gallo



How

  1. Preheat oven to 425 degrees.

  2. Using the side of the avocado without the pit. Put on a baking sheet and crack a small egg into the center. (You may have to scoop a little more avocado out for the egg to fit.

  3. Bake (15 - 20 min)

  4. Remove from the oven and top with pico when serving.
