We all look for ways to have more energy during our busy days. So why not wrap it in portable deliciousness.

It has become a fun little habit to make them ahead on Sundays. That way delicious and healthy snacks are covered for the week, and ready for those 4 o’clock moments when hunger hits.

Freezing them will give you the same enticing mix of flavours in an ice cream-like consistency! These easy to make Blueberry date energy “ice cream” balls will satisfy and take care of that after-meal-sweet-crraving.

 

WHAT

(12 Blueberry Date Energy Balls)

15-20 pitted medjool dates

1 cup walnuts

1/2 cup almonds

1/2 cup frozen blueberries

1 tablespoon almond butter

Coconut shavings, Matcha powder & Spirulina powder

Bee pollen



HOW

  1. Soak dates in warm water (10 minutes)

  2. In food processor; Mix dates, walnuts, almonds, frozen blueberries and almond butter on high (2-5 minutes) until desired consistency is reached.

  3. Form into balls with hands and roll in coconut, matcha, spirulina. Sprinkle energy balls with bee pollen.

  4. Place in fridge or freezer (at least 1 hour) if you prefer.
