Delicious Bite of Energy
We all look for ways to have more energy during our busy days. So why not wrap it in portable deliciousness.
It has become a fun little habit to make them ahead on Sundays. That way delicious and healthy snacks are covered for the week, and ready for those 4 o’clock moments when hunger hits.
Freezing them will give you the same enticing mix of flavours in an ice cream-like consistency! These easy to make Blueberry date energy “ice cream” balls will satisfy and take care of that after-meal-sweet-crraving.
(12 Blueberry Date Energy Balls)
15-20 pitted medjool dates
1 cup walnuts
1/2 cup almonds
1/2 cup frozen blueberries
1 tablespoon almond butter
Coconut shavings, Matcha powder & Spirulina powder
Soak dates in warm water (10 minutes)
In food processor; Mix dates, walnuts, almonds, frozen blueberries and almond butter on high (2-5 minutes) until desired consistency is reached.
Form into balls with hands and roll in coconut, matcha, spirulina. Sprinkle energy balls with bee pollen.
Place in fridge or freezer (at least 1 hour) if you prefer.
