ESPRESSO CHOCOLATE MUG-CAKE

This fun and insanely easy mug-dessert might be the best chocolate cake you’ve ever had.
In all seriousness, the texture and sweetness balance is right on point.
*Craving increases while writing about it… Grab a mug!
WHAT
3 tablespoons almond, coconut or all purpose flour
1 teaspoon instant coffee powder
2 tablespoons drinking chocolate powder or sweetened cocoa powder
1/4 teaspoon baking powder
2 tablespoons (almond) milk
1 egg
2 tablespoons oil
1/2 teaspoon vanilla extract
3 tablespoons coconut, or regular sugar
HOW
In a mixing bowl; combine purpose flour, coffee powder, sugar and baking powder. Mix well.
Add milk, egg, oil and vanilla extract ,stir with a fork, just until combined.
Pour mixture into a greased mug and microwave on high (90 seconds) until cooked through. (careful do not over cook)
Serve with a scoop of vanilla ice cream or simply dust with powdered sugar.
NOTE
You can use cocoa powder instead of drinking chocolate mix, in that case, add 1 – 2 teaspoons more sugar according to your taste.
