Imagine combining the familiar crunchy texture of this all-time classic with a wonderful fresh and crispy salad. Sounds good? It is!

This falafel salad is not only vegan, it is also easy to make, requires just a few ingredients and is perfect for those that enjoy a healthy meal on the go but don’t have a lot of time on their hands.

The variation possibilities are endless. We love to garnish this salad box with a vegan tzatziki sauce, but exchange tzatziki with beet hummus and it will completely change your dish!

Keep experimenting and this falafel dish will leave you nothing but satisfied.

What

FALAFEL SALAD:

frozen store bought Falafels - cooked according to packaging structions

Baby lettuce mix

1/4 Red Pepper - thinly sliced

Cucumber - thinly sliced

Purple Cabbage - thinly sliced

1-2 Radishes - thinly sliced

Pea shoots

Lemon wedge

store bought Beet Hummus or Vegan tzatziki (recipe below)



VEGAN TZATZIKI:

1/4 cup vegan Sour Cream or plain Coconut Yogurt

splash of non-dairy Milk

juice from half a Lemon

1 tablespoon of fresh or dried Dill - finely chopped

1/2 tablespoon fresh or dried Chives - finely chopped

1/4 teaspoon Garlic Powder

pinch of Salt and Pepper



HOW

  1. In a small bowl; Add all tzatziki ingredients and whisk to combine.

  2. Toss the lettuce and other vegetables together. Top with cooked falafels and drizzle with beet hummus or tzatzik (or both)

NOTE

Alternatively, you can store the sauces in separate containers until ready to consume.
