200g dark chocolate 70% - chopped small
150g unsalted (dairy free) butter - roughly chopped
pinch of sea salt
1/2 cup goji berries
1/2 cup raisins
1/2 cup dried figs - roughly chopped
1 cup mixed nuts. We used cashews, pistachios, pecans, macadamias and almonds
2-3 fresh figs - thinly sliced
Tupperware or a small pan (the pan used for this recipe was 9x7)
In a small saucepan; add water bring to a gentle boil. Place a small glass bowl on top of the pan of boiling water to create a double boiler. In this glass bowl; Add chocolate, butter and salt. Stir regularly until chocolate and butter are melted.
In a separate medium size bowl; add goji berries, raisins, dried figs and nuts.
Once chocolate and butter are completely melted, remove from heat and pour into the bowl of dried fruit and nuts. Stir well to combine. (keep it nice and chunky)
Line Tupperware or a small pan with cling film, be sure leave cling film long enough that it hangs over the edges of the tupperware/pan.
Pour the chocolate mixture into the Tupperware/pan and spread evenly. Top with sliced fresh fig, press the fig slightly down into the chocolate. Place Tupperware in refrigerator (1-2 hours) until completely firm.
Once firm, hold the edges of the cling film to pop your Fancy Cake out of the Tupperware. With sharp knife, cut into small bars. Store in fridge or freezer.
