Do cheesecake and berries make you drool?

Then you will love this raw iced berry cheesecake recipe! We call this a raw cheesecake because for this treat you won’t even touch your oven!

These frozen No-Bake cakes are easily made with a 3 ingredient crust of Medjool dates and we replaced the cream cheese with raw creamy cashews. The combination is enticing.

The berries with a hint of lemon complement this cheesecake perfectly! This way you can totally indulge yourself, without putting refined sugar, processed flours, corn syrup and other ingredients found in most desserts into your body.

Desserts that are made from rich ingredients like nuts, dates, and maple syrup, are full of vitamins and minerals that provide your body with the nutritions it needs.

That’s not to say that you should go crazy and eat an entire pan of these delicious bars but if you are going to treat yourself this is definitely the way to do it!

WHAT

(8 iced cakes)

2 cups raw cashews - soaked overnight

⅓ cup raw honey or maple syrup

¼ cup coconut oil - melted

¼ teaspoon ground cinnamon

2 tablespoons lemon juice

1 cup blue and raspberries



CRUST:

2 cups walnuts

10-12 medjool dates

2 tablespoons coconut oil

Pinch sea salt

Blender/Food processor



ESSEMBLE:

Fresh berries or coconut flakes



HOW

FILLING:
  1. In your blender; Place cashews, honey, coconut oil, cinnamon, lemon juice and berries and blend until smooth.

CRUST:
  1. In your food processor: Place walnuts and pulse until finely chopped.

  2. Add dates and salt. Pulse until well combined. Add coconut oil and pulse once more.

ASSEMBLE:
  1. line a baking pan with parchment paper or silicone molds. Firmly press the crust into the pan to create a layer. Add filling and spread over the crust. Freeze (for 3 hours minimum or overnight)

SERVE:
  1. Serve with fresh Berries and Coconut flakes
