Is it ok to be this excited about a coleslaw?

There is something about a zesty, creamy, crunchy, sweet and slightly spicy cole slaw. You can add it to everything to your vegan hot dogs, veggie burgers, sandwiches, pitas. “But wait, there’s more…” It’s vegan, dairy-free and it’s PINK! 

Use it as a side salad or salad topper. Or just indulge in a giant bowl of this amazing stuff.

We’ve been making this Pink Cole Slaw a few days ago and have been re-making it again and again (and again today!) We love this dish because of its simplicity and deliciousness. It is a real flavor-enhancer for so many meals. And a great way to get everyone, even the little ones excited about veggies and salads!

This coleslaw is very addictive… It is just so refreshing… Get the recipe!

The little surprise part is that the photo doesn’t even do the creaminess-level justice. The dressing creates a light creaminess that is zesty from the cider vinegar and even the red onion after marinating in the fridge.

If this all sounds a bit too creamy and pinky for you, we got you. The red onion and black pepper add a little bite! Delicious add-ins to this dish: some relish, sauerkraut, chopped onions, diced tomatoes.

WHAT

(4 servings)

280g finely shredded White Cabbage

2 tablespoons vegan Ranch Dressing (optional, If you like a creamier cole slaw)

1 teaspoon Apple Cider (or red wine) Vinegar

¼ teaspoon ground Black Pepper

½ cup shredded Beets (raw or cooked)

½ cup Red Onion - thinly sliced

1-2 teaspoon Maple Syrup - optional

optional add-ins: 1 small Apple - chopped, 1/4 cup Sauerkraut, 2-3 tablespoon Raisins



HOW

  1. In large mixing bowl; Add all cole slaw ingredients. Toss well until cabbage turns pink and all ingredients soften from the liquids.

  2. Cover and place in the fridge (at least 20 minutes) or overnight for optimal flavor.
