We can’t get through the fall season
Without craving & making pumpkin baked goods. We just can’t!
There has been some stress-eating around here. What does that look like? Mindlessly munching your life away. Pfew… Everybody falls off the wagon sometimes, especially around the fall.
And oddly enough, those moment’s usually creep in after lunch. You know the feeling that you’re full and satisfied but everything in your kitchen says “binge on me now!”
In some phases, things aren’t exactly going the way we planned out. And that’s all ok.
So if we want to indulge in some delicious baked goods, we might as well make them easy to prepare, Paleo, naturally sweetened, gluten-free, dairy-free, and a 100 times better than traditional baked goods.
Intoxicate your house with the fragrant smell of spiced pumpkin, then dive (face first) into a perfectly cut, perfectly pumpkin’d, sprinkled-in-chocolate Blondie Bar.
They are so fall!
1 cup Almond Flour
½ cup Coconut Flour
1½ teaspoon Baking Powder
2 teaspoons Pumpkin Pie Spice
½ teaspoon Salt
1 cup Pumpkin Puree
1 tablespoon Coconut Oil
¼ cup + 2 tablespoons Maple Syrup
½ cup dairyfree Chocolate Chips or Cacao Nibs
Baking Pan or 8x8 Brownie Pan (for thicker bars)
Preheat oven to 375°F
In medium mixing bowl; Combine almond flour, coconut flour, baking powder, pumpkin pie spice, and salt
In a seperate bowl; Combine pumpkin puree, melted coconut oil, maple syrup, and eggs
Add wet ingredients into the bowl of dry ingredients. Mix well. Fold in the chocolate chips
Pour the mixture into a greased 9x13 baking pan or 8x8 brownie pan (for thicker bars)
Cook (30 minutes) until center is set. Let cool and cut into bars
