Shrimp Avo Bites

WHAT (8 servings)
  • SHRIMP & CUCUMBER BITES:
  • 1 tablespoon oil
  • 1 tablespoon creole seasoning*
  • 16 oz/0,5 kg shrimp - peeled and deviened
  • 1 cucumber - sliced
  • 1/4 cup remoulade sauce (optional)
  • FOR THE AVOCADO SAUCE:
  • 1 avocado - mashed
  • 1 green onion - thinly sliced or chopped
  • 2 tablespoons cilantro and/or parsley - chopped
  • 1 tablespoon lemon juice
  • salt and cayenne, to taste
  • EASY HOMEMADE CAJON SEASONING, mix together:
  • 3 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
HOW

Preheat (medium-high) heavy bottomed pan/skillet
SHRIMP & CUCUMBER BITES:
1 Toss the shrimp in the oil and seasoning. Cook until slightly blackened (about 2-3 minutes per side)
Assemble: The bites with cucumber slices, topped with creamy avocado sauce, shrimp and remoulade sauce.

AVOCADO SAUCE:

Mix all ingredients and enjoy!

NOTE

Option: Use your favorite guacamole instead of this avocado sauce.
