Breakfast for dinner too,  particularly when it involves eggs, this miracle meal needs to be in your rotation.

On a busy Monday, allow yourself five minutes — yes, really 5! — Perfect for when you need delicious dinner for one, fast.

What

(1 serving)

1/4 cup marinara sauce

1/4 cup cooked chickpeas - drained, rinsed (if canned)

1/8 teaspoon red pepper flakes

Pinch of salt

1 large egg



How

  1. Coat a microwave-safe wide and shallow bowl with cooking spray.

  2. Add the marinara sauce, chickpeas, red pepper flakes, salt and stir to combine.

  3. Make a well in the center of the sauce and crack the egg into the well. Pierce the center of the egg yolk once with a sharp paring knife.

  4. Cover the bowl with a damp paper towel. Microwave at 80% power for 1 minute.

  5. Continue cooking in 20-seconds bursts at 80% power until the white is set and yolk is at your preferred doneness, 3 to 4 bursts total. Serve immediately.

  6. Enjoy :)
