Spiralized power breakfast

Most people following paleo style diets tend to shy away from starchy vegetables, an exception should definitely be made for sweet potatoes.
These babies are loaded with minerals and vitamins. In fact, they are one of the best sources of vitamin A and beta-carotene. When you incorporate them into your meals you also get your fix of vitamin C and D. They support the immune system and are required by your body to function properly.
These homemade spiralized sweet paleo waffles are an all-around nutritional powerhouse.
1 pound sweet potato, peeled
2 eggs, beaten
2 tbsp olive oil, plus extra for greasing
¼ tsp garlic powder
¼ tsp chili flakes
3 tbsp chopped fresh chives, plus extra for garnish
Salt to taste
Spiralize sweet potatoes into noodles.
Preheat 2 tablespoon olive oil in a large skillet over medium heat. Add sweet potato noodles and stir.
Cover and cook for 5 minutes, stirring occasionally, until noodles are soft. Remove from the heat.
In a large bowl; add noodles, eggs, garlic powder, chili flakes, and chives. Season with salt to taste. Stir well.
Preheat waffle iron and coat it with oil.
Ladle half of the mixture and cook 10-15 minutes, or until golden and crispy. Repeat with the rest of the mixture.
Sprinkle with extra chopped chives. Top with desired toppings and serve.
